It's raw, has no sugar, vegan, full of whole foods rich in good fats. It's a super food for kids because it's so rich in nutrition even if you have a spoonful.
I made this for the first time and instantly fell in love with all the flavours in this dessert. It's tangy and sweet, can't just describe in words. You guys have to try it.
For the cheese cake crust
Almonds - 10-15
Dates - 5-6
Blend both to make a paste. Texture of the paste depends on your taste. Make it a fine if ur baby can't chew well.
For the cheese cake
Cashews - 1 cup. About 25-30 nos.
Vanilla essence - 1/2 spoon
Honey or maple syrup - 5-6 spoons
Coconut oil/olive oil/any refined oil - 5-6 spoons
Lemon - 1 , extract the entire juice
Rock salt - 1 pinch (optional)
Blend all the above to make a fine paste. It becomes very creamy and fluffy. Pour on the almond date crust. Add a fruit of your choice as garnish, freeze the dessert for 3-4 hours.
Serve cold.
