My son recently had his first Russian salad at a cafe and he thoroughly enjoyed it. I wanted to replicate the same for him using healthier ingredients instead of adding mayonnaise. Hung curd worked as a great substitute for mayo. It was thick, creamy and gave a great flavour. You dont need to add salt as curd re...places it with its slight sourness. And its super easy to make. I am sure your babies will pick those veggies and enjoy eating them on their own. Try it!
Ingredients:
Hung Curd 1 Cup
Carrot 1
Potato 1
Cucumber 1
Coriander 1 spoon finely chopped
Pepper 1/2 spoon
Extra Virgin Olive Oil 1 spoon (optiona)
Organic Brown Sugar 1/4 spoon (optional)
Chop the carrot and potato to very small pieces. Steam them for 8 mins. Chop the cucumber. Add the steamed carrot, potato to the cucumber and mix it up with the remaining ingredients except hung curd. Once all the ingredients are cool, add the hung curd, mix, keep in the fridge for 10-15 mins and enjoy. You can add some salt for the fussy toddlers to make it more tastier.
