Corn and Peas makes a soft, yummy & right-sized veggie options for finger food recipes. They are small & soft enough for your little ones to bite and still big enough to hold between their tiny thumb & index finger (called the pincer grip). Pincer grip in babies develops post 8 months.
Ingredients:
- 3/4th Cup American Sweet Corn
- 3/4th Cup Fresh Green Peas
- 2 tsp Lemon Juice
- 1 tsp Pepper Powder
- Finely Chopped Coriander (optional for freshness)
You make this recipe within 10 mins in two ways.
Method 1 (Pressure Cooking - Quick & Easy):
- In a small pressure cooker add 4 small cups of water
- Add the corn and peas to it and close the lid
- Let it whistle for 2-3 times
- Wait for the pressure cooker lid to cool down and then open it in a way that the steam faces the other side.
- Take out the boiled peas and corn in a bowl and keep this boiled water aside.
- Sprinkle pepper and lemon to the corn and peas and mix well
- Garnish with freshly chopped coriander
- That boiled water should not be thrown; it contains nutrients and can be used to knead dough or as a soup starter.
Method 2 (Steaming - Retains Max Nutrition):
- In a steamer, add 2-3 cups of water at the bottom
- Add the peas and corn in the steamer plate and close the lid
- Let it steam for 10 mins
- Take out the boiled peas and corn in a bowl
- Sprinkle pepper and lemon to the corn and peas and mix well
- Garnish with freshly chopped coriander
